Physiological activities of two new sweet persimmon cultivars [Arumnuri (AN) and Hongchu (HC)], which were bred for dispersion at harvest time, were compared with old cultivars [Buyu (FY, Japanese Fuyu), Seochonjosaeng (NW, Japanese Nishimurawase), and Sangseojosaeng (UW, Japanese Uenishiwase)]. Ethanol extracts were prepared from each sweet persimmon pulp, and subsequently evaluated for total phenol content (TPC), soluble tannin content (SPC), antioxidant activity, alcohol dehydrogenase (ADH) activity, and tyrosinase inhibition activity (TIA). TPC, SPC, and antioxidant activity of AN were relatively higher than other cultivars. ADH activities of all cultivars were similar, whereas TIA was highest in FY. These results support the hypothesis that the new persimmon cultivar AN can be propagated to produce crops with good antioxidant and ADH activities, as compared to the old traditional persimmon cultivars.
